Cajun Spiced Potatoes

For the ones who have visited Barbeque Nation even once will find this name very familiar, Cajun spiced potatoes the popular and mouth watering vegetarian dish in their menu.
Potatoes- everyone’s favorite! Best thing about this recipe is no peeling the potatoes plus the potato skin contains B vitamins, calcium and other nutrients. And because potato skin contains no fat, no cholesterol and no sodium it can be part of a healthy diet!

But what is Cajun?
It is a style of cooking developed by the Cajun – Acadians who were deported from Acadia to Louisiana during the 18th century and who incorporated West African, French and Spanish cooking techniques into their original cuisine.
Cajun cuisine is sometimes referred to as a ‘rustic cuisine’, meaning that it is based on locally available ingredients and that preparation is relatively simple.

In case of Cajun sauce, Everyone tends to have their own spin on it, but in general Cajun sauce, is a spicy blend featuring lots of paprika, cayenne, garlic powder, pepper and oregano.

So lets try this recipe on our own and get to know how it really taste.
FYI: It is always a hit in my friends circle. Perfect appetizer for parties. You can make them in different ways, Either you baked them at home or grill them at barbeque or even fry them, They will taste awesome in all ways.

  • For marination
  • For the Dip

Instructions

    For Baked potatoes
  • Take 15 baby potatoes par boiled in salt
  • Press gently all the par boiled potatoes
  • For Marination
  • Take 1/2 cup All purpose flour or Maida in a mixing bowl
  • Add 1/2 cup corn flour
  • Add appx 1 cup water in batches to make a thick batter
  • Add the below and mix well: 1)salt to taste 2)1 tsp oregano powder 3)1 tsp parsley powder 4)1 tsp garlic powder 5)1 tsp black pepper powder 6) 1tsp red chilli flakes
  • Marinate all the potatoes
  • Bake the potatoes in oven for 350F for 20 mins At this step you can either Grill them on a Barbeque Grill for 15 mins on both sides or Stir Fry them Choose whichever option is convenient and best for you
  • For the Dip
  • take 1/3 portion of mayonaise Take 1/3 portion of sour cream 1/3 portion of curd. If you want You can skip the curd and make the remaining portion half-half
  • Add the below and mix well: 1)salt to taste 2)1 tsp oregano powder 3)1 tsp parsley powder 4)1 tsp garlic powder 5)1tsp red chilli flakes 6)1 tbsp olive oil or any oil
  • Serve baby potatoes with the dip and top it with finely chopped onions(optional)
