Amritsari Aloo Chole – A Punjabi Delight! 🍛✨

Chole or chickpeas are high in protein and make an excellent replacement for meat in vegetarian and vegan diets. Chole can be made in different styles i.e Pindi Chole, Amritsari Chole, Amritsari Pindi chole and so on... In this Post we will cover Amritsari Chole one of the soul recipes in Punjab. It is absolutely delicious recipe which is made from freshly roasted chole masala and tamarind pulp which gives it a dark color and authentic taste with extra goodness of potatoes. This dish will surely bring a flavor of Amritsar streets into your home. It goes perfect along with Kulcha, Naan or Puri, Rice. It can be topped with laccha pyaz and green chilies. This dish gives best flavors when masalas are cooked for little longer but its totally worth the wait. Tips to Note: 1)Add dry Masalas while Boiling Chole for added flavor 2)Saute the Masalas really well for about 30 minutes for enhanced flavor 3)Add Garam masala/ Chole masala again at the end 4)You can also add Tea bags for added color 5)Add a generous dollop of ghee while serving to enhance taste. 6)Chole masala used here already has a tang of Anardana or Aamchur powder, Please use it otherwise. 7)Add Oil as per your judgment and need

Ingredients
    For Boiling Chole
  • 1/2 kg Chickpeas (Chole)
  • 2 Potatoes
  • 7-8 Peppercorns
  • 2-3 BayLeaves
  • 3-4 Cardamon
  • 2 Black Cardamon (Big)
  • 4 Cloves
  • 1 tsp Soda or Fruit salt
  • For Tempering Masala
  • 1/3 cup Oil
  • 3 tsp Cumin seeds
  • 1 tsp Asafoetida
  • 2 tsp Ginger (minced)
  • 5-6 Garlic cloves (minced)
  • 2-3 Tomatoes (Pureed with Garlic and Green chillies)
  • Pink Salt (as per your taste)
  • 2 tsp Turmeric Powder
  • 3 tsp Kashmiri Red Chilli Powder
  • 4 tsp Coriander Powder
  • 2 tsp Cumin Powder
  • 2 tbsp Water
  • 1 tbsp Garam Masala
  • 4 tbsp Chole Masala
Instructions
    For Boiling Chole/Chickpeas
  1. Add Chickpeas with Potatoes in Cooker/Instant Pot
  2. Add salt to taste and other things as shown below
  3. 7-8 Peppercorns
  4. 2-3 Bay leaves
  5. 3-4 Cardamom
  6. 4 Cloves
  7. 2 Big Elaichi
  8. 1 TSP Soda or Fruit Salt
  9. Mix everything and Close the Lid and pressure cook for 20 mins or 3-4 whistles in cooker
  10. For Chole gravy masala
  11. Add 3 TSP Jeera to 1 TBSP of oil
  12. Add 1 TSP of Asofoetedia
  13. Add 2 TSP Ginger minced
  14. Add 2 Onions finely chopped. Saute till they turn pink
  15. Add 5-6 Garlic cloves minced
  16. Puree 2-3 Tomatoes with 5-6 Garlic Cloves, 2-3 Green Chilies. Saute well.
  17. Add Pink Salt for Taste
  18. Add 2 TSP Turmeric Powder
  19. Add 3 TSP Kashmiri Red Chilli Powder
  20. Add 4 TSP Coriander Powder
  21. Add 2 TSP Cumin Powder
  22. Add 1/2 cup water
  23. Close the lid and let it cook till oil separates. This may take around 15-20 minutes
  24. Add 5 TSP of Tamarind Paste
  25. Add 3TSP of Chole masala
  26. Add boiled Chole. Mix well
  27. Add Boiled Potatoes
  28. Add 1 TBSP Garam Masala
  29. Add 1 TBSP Chole masala again and let it cook for 5 mins
  30. Garnish with Cilantro
